no lardo is cured pork fat that is often found on charcuterie plates sliced very thin. I just cut it up and grind it and then whip it with the mixer until it all comes together. then you can pretty much do whatever you want with it. it is great on toast and I'm starting to experiment with it in other things. it has a really rich flavor.

So is this like some kind of a compound butter thing except made with rendered pork fat?
